Fall isn’t complete without oatmeal raisin cookies. I found this recipe on the back of a cereal box of granola with raisins, not realizing it was a twist on the traditional recipe, using granola instead of plain oats. The flavor was buttery, and the chew went on and on…supremely satisfying if you value chewiness in your cookies. I think next time I make these I’ll just use my old family recipe and replace the oats with a more seedy and nutty granola. I’ll also replace the raisins with dried blueberries and a chopped up chocolate bar.

Oatmeal Raisin Cookies Chews
1 3/4 cups flour
1 3/4 cups firmly packed brown sugar
1 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon baking soda.
Preheat oven to 375 F. In large bowl stir together ingredients.

Stir in 1 cup of softened butter, 2 eggs, and 1 teaspoon vanilla.

Stir in 3 cups of granola or granola-cereal with raisins.

Form dough into 1 inch balls and roll in 2 more cups of granola.

Bake for 10-14 minutes on ungreased cookie sheets.

Remove when golden brown. Makes 3-4 dozen cookies.

Let cool completely for maximum chew!

Looks yummy and totally adaptable. Bet those would be good with cranberries and lemon gratings. Or apple bits, maybe even just some chunky apple sauce.
